Roast Pumpkin & Ginger Soup
A classic thick rich and hearty pumpkin soup with a bit of an Asian twist. A bit of a family favourite and perfect as the days get colder.
SERVES 1 – 2 adults
Butternut pumpkin, grey pumpkin, onion, raw ginger, coriander root, olive oil, salt, black pepper.

Place sealed bag in a pot of boiling water for approximately 15 minutes. Remove with tongs. Cut bag & serve [ careful it’s hot ].
Top with a dollop of sour cream & chopped coriander & don’t forget a big slice of toasted buttered sour dough.
