1. In a small bowl add some thinly sliced 4 inch ribbons of cucumber and some finely sliced rounds of long red chilli. Cover with Pickling Liquor approximately 1 hour before use.
2. In a small bowl dice some cucumber, long red chilli and Spanish onion. Cover with Pickling Liquor approximately 1 hour before use. Add crushed peanuts just before serving. Makes a great dipping sauce too.
