Asian Ginger Broth
We’re excited..! Not seen in public since the old days of Jimmy Liks. Our Asian Ginger Broth has been kept as a much loved family secret and staple lunch or dinner. It is a rich textural Asian broth that works beautifully with dumplings, alone as a soup or with a piece of steamed fish.
SERVES 1 – 3 adults
Chicken stock, ginger, garlic, coriander root, Spanish onion, soy sauce, oyster sauce, Shao Hsing wine, rock candy, white pepper.

Place sealed bag in a pot of boiling water for approximately 15 minutes. Remove with tongs. Cut bag & serve [ careful it’s hot ].

Quick & Simple Broth with Asian Greens
Heat broth in small saucepan. Once hot add some bok choy or Chinese broccoli until cooked and serve. Feel free to add any or all of the folowing… a sprinkle of coriander and or green shallot, a pinch of dried garlic, a drizzle of chilli oil.
Steamed fish with Asian Greens
Place your favourite white fleshed whole fish (Baby Snapper is great) of fillet (Snapper or Blue Eyed Cod are great) in a pan with a lid. If your choice is something like a whole baby snapper get one that will fit in your frypan with a lid. Add broth, place on lid and cook. Once fish is cooked remove carefully, making sure to keep in intact and place it on a shallow serving bowl. Put Asian greens (bok choy, Chinese broccoli,…) in broth and return the lid, add a dash of water if needed. Cook for a minute or two. Pour broth and greens however you’d like back over your fish. Garnish with some finely julienned ginger a sprinkle of coriander and green shallot, some fresh chilli or chilli oil, fried garlic or fried shallot. Serve with rice on the side.
